The artisan bakery

 

Born and raised somewhere between the Kingston harbour and the Blue Mountain Peaks in Jamaica on an island with very few baking traditions, nothing fell more natural for me than to start an artisan bakery among snowy peaks in the midnight sun.

 

SPRØ (double meaning "CRAZY" and "CRISP") is a stone oven bakery established in Oppdal June 19th, 2015. We craft our breads from sourdough and give them time to rise for taste development. Finally we bake them in a hearth oven. Alongside true baked goods, we serve simple dishes and we have an artisan selection of drinks and beverages. For coffee, we use the best we found: coffee beans from JACU roasted in the coastal town of Ålesund.

 

SPRØ is inspired by French, Italian, American and Norwegian baking traditions. Among bakeries I would particularly recommend a visit to the bakery in Lom. Established by Morten Schakenda sharing experiences openly and giving me the opportunity to learn. I also worked at an American artisan bakery the Bread Smith which is well worth a visit if you are in Minnesota.

 

SPRØ is an artisan bakery so you do not have to wonder if we dropped some nuts or bolts in the dough (this is not a joke!). It is an open bakery where you can see everything we do. Most work is done by hand and we leave the breads to rise overnight. Our baked goods have a natural shelf life with no additives. This means that some of our bread does not keep as long as those you find in the supermarket because we do not use "bread improvers". However, we do have good advice for how to store your bread.

 

SPRØ is running against the tide. In recent years, 1 of 3 locally baked breads in Norway have been replaced by import bread. A few industrial bakeries closely linked to supermark chains have "blossomed" and account for most of the Norwegian manufactured baked goods. There, bread is produced within 2 hours from mixing of ingredients until it comes on an assembly line in tunnel ovens ready baked. With us the same process takes up to 2 days.
